Chef Margot Henderson has long been known as one of London's top chefs through the original Rochelle Canteen in Hackney. There, she champions the best of British produce, particularly cuts of meat that are often overlooked, and creates dishes that let the ingredients simply shine.
A few months back, she opened a new branch at the Institute of Contemporary Arts. And again, the modus operandi involves stripping back the dishes - no bells or whistles - but just simply cooked food. However, with this style, there's no place for a chef to hide.
